5 days

i can't believe it's been five days since my last post.

what's been going on?

i'm tired. i haven't felt well. and i have been having problems with one of my fillings which is turning out to be no fun. i won't bore you with all that.

my RA has been acting up. it's made me tired and sore and even nauseous.

my rosemary is sprouting. after researching, that's a HUGE thing because apparently it's difficult to grow rosemary from seeds. and i have THREE sprouts now. of course, i won't get to enjoy it for a few years-- sounds like it takes two or three years for rosemary to get to a really "usable" size. and next time i want some, i'll grow it from a cutting of one of these plants.

i have a super boyfriend. he's been really caring and helpful and is just the greatest caretaker for me lately. he's been taking care of some of the cooking and LOTS of the cleaning. i woke up this morning and found that yesterday he did all the dishes (and they'd piled up in the sink for about three days). he's pretty great.

*shame*

remember last week, when i told you i forgot to pack my bra in my gym bag, so i had to hang loose all day?

panties. seriously. who does that? don't hate me for it. and don't hate me for telling you. but i lucked out and am wearing white scrub pants today. wait. what? no panties doesn't match well with white scrubs?

well, crap.

it's okay. because i've been working out, the scrub pants are big enough to fit my yoga capris underneath them. so, even though it's going to hit 75 today, i'm wearing two pair of pants.

GAH.

Tonight I am packing my bag up right, with extra socks, undies, and a bra or two... just in case.

fresh boule bread

i love fresh bread. i love bread, period. but fresh bread is so much better. and maybe it's just me, but when i make bread, it tastes better than when you do. not saying you make bad bread, just saying that i taste my homemadeness in my bread.

the thing is, making fresh bread takes time. hours. sometimes days. so, without a breadmaker, it's not that easy to make a good loaf of fresh, artisan-style bread, especially when you think at 5pm that you'd like it with your dinner at 5:40.
BUT.
i found a way. i am amazed by this bread. it's my new favorite. and you can make so many variations that you could easily make bread to have as french toast, or cinnamon bread, or wheat bread, or sourdough.

i did not make up this recipe. it came from this site. i am, however, providing you with my version of it, including my tips and tricks that i found with working with this dough.

3 cups warm water
1.5 T salt
1.5 T yeast
6.5 cups flour

in a bowl that has a lid (it needs to be a pretty large bowl), mix the warm water (i just got hot water out of my tap) along with the salt and the yeast. it's not important to get it all dissolved.
**at this point, you can add any herbs or spices you wish. or leave it plain. up to you**(i added garlic powder and dried rosemary. i can't wait to do this with fresh herbs)

add the flour to the water mixture, and mix it with a wooden spoon just until it's all wet. don't over mix it. it ends up being a pretty soft dough that conforms to the bowl.

set it on the counter with the lid just resting on it (don't seal it tight) for a few hours. up to five, i think the recipe says. i did it for about two. then move it to the fridge, where it will rise. it's supposed to be in the fridge for a few hours before use, but the blog that reviewed this bread said they didn't wait and it turned out fine. i'd let it sit because it grew in size by about 50%.

when you're ready to make a loaf of bread, get the oven ready first. preheat to 450 degrees, and put the baking sheet in the middle of the oven, and the broiler pan on the lowest rack so they both get hot. dust the top of the dough with flour, then use a serrated knife to cut off about 1/4 of the dough. use your flour-dusted hands to curl the ends under it a few times, so it is a ball with the "loose" ends tucked under it (i did this on a piece of parchment paper so i could just move the paper into the oven on the baking sheet). dust the top of the ball with flour, and using the serrated knife, slice a few times in the top. when the oven is nice and hot, put the dough on the baking rack, and add about 1.5-2 cups of hot water to the broiler pan for steam. bake for 30 minutes.

when it came out of the oven, it was really crispy on the outside, and very chewy on the inside. to make the crust softer, i put it in a ziploc bag while still warm and it softened just enough.


warning: the bread is not light. it is dense and chewy... and DELICIOUSLY ADDICTING.

snowy first day of spring

actually, i think yesterday was the first day of spring. regardless, it snowed last night. on may 21st. over an inch! it's still out there! boo. at least chris got the yard mowed friday after work so we weren't totally bummed saturday at not getting that done.

this weekend was SO productive. yesterday, i washed all the walls and ceilings in the house (with chris' help!!) in an attempt to get rid of the smoke smells. we used a warm water/ vinegar/ ammonia wash, and i think it did a pretty good job at cleaning the smell away! of course, i've been baking all weekend, so the house has smelled amazing because of that.

after cleaning, we took a nap, then went to his sister's house to get his hair cut. she always does a good job, but this time it was great! it wasn't as short on the sides (i like that), and it was so good that he really doesn't even need much gel in his hair to style it now. it's great! then we came home and watched the 2nd jurassic park movie... well, i did. chris fell asleep so he didn't see but just about half of it.

today we went to late church service because the snow made us want to go slow. i cooked oatmeal for chris. after church, we came home and i started being domestic. i found that my salsa garden is sprouting (yay!), i baked banana-chocolate-chip bread, i baked boule bread (i'll blog about that right after this, with the recipe), and i sewed together half of the strips for the top of my quilt. i love feeling so productive. then i made dinner (tilapia, veggies, and pasta), and now chris and i are at border's. he wanted to get out of the house, and my legs are killing me, so i plopped into one of their comfy chairs and am blogging from here.

stressful times!

i'm getting married this summer.
no, i'm not engaged. we don't have a date set. we have no plans.
but i'm getting married this summer.

chris is going the respectful thing and talking to my parents before he proposes. call us old-school, traditional, whatever-- but this is how we want it to be.

anyways, i (sort of) refuse to plan the actual wedding until i have a ring on my finger (hurry up, May vacation!)... but because we're planning on a short engagement, we're already looking to things for after we get married. in particular, where we'll live.

moving and wedding planning are supposed to be some of the most stressful life events.
just sayin'.

we already found where we want to live! since we're not going to move there until end of july, we're not sure what the openings will be-- but we're extremely hopeful that this place works out, and particularly that a floor plan i love works out. it's across the street from the farmer's market. this is a dream come true for me! i plan on deciding what's for dinner based on what's fresh at the market. it's a half-mile walk to the train station. which means i can not touch my car for an entire week. amazing.

if you're the praying type, please include these two things in your lists:
1) that the place works out if it's supposed to be.
2) that chris and i stay sane through the decisions that are on the way.

whoops...


here's the story:

so, i had finished my workout, showered, partially dressed, and was standing in front of the mirror doing my hair and makeup. while i was drying my hair, a lady came in and showered, then went to her locker to get dressed. after a few minutes, she came near where i was-- wearing heels, black stockings, and a black coat.

she said, "i forgot my clothes".

i replied with, "it's okay, i forgot my bra". because i did.

luckily, i'm wearing scrubs today so it's not so bad. and i m wearing my beatles shirt under it. poor lady, though. she stopped by walgreens and picked up a $5 dress that they often have in the middle aisle... it barely covered her butt. seriously.

thank you, mom, for not passing on gigundo boobs. for once, i thank our subtle chests :-)

challenge monday

it's not as bad as it sounds.

i got my texas driver's license today. well, i guess texans like to do extra work, because i didn't even get a real license. i got a piece of paper with my picture on it. lame. seriously. why do you have to mail it to me? every other state i've lived in just prints out your license in about 45 seconds and you're good to go.

this weekend was phenomenal. saturday was baby expo (to get tons of free goodies for leann), IKEA (it was my first time going there!), seeing some of chris' friends, lowe's (for an herb garden and a salsa garden), hobby lobby (for a new canvas because i hate not having a project in process), dinner in grapevine with some more of chris' friends, then to the main event (arcade!)

sunday was beautiful. chris and i spent most of the day outside, working in the yard or planting my gardens, took a walk with the doggies, then nearly burned the house down. boo to forgetting about broccoli cooking over a gas stove.

new music thursday, etc.

i am *loving* the weather lately. yesterday it was supposed to rain and storm all day... it did, but only until about 10am! then the sun came out, the sky was blue, and it was gorgeous.

after my 7-hours of training yesterday, all i wanted to do was prop my legs up on my desk and read a book until chris came to get me. instead, i went and worked out. i made it longer than i have yet on the elliptical and the stationary bike! AND, i hit a milestone. i weigh less than i have in years. and i feel good about it. chris said my waist is getting skinnier. i'm not sure about that, but i can tell i don't get as winded when i'm working out (which means i can actually work up a sweat), and my legs are feeling much stronger.

and isn't she just adorable? i want to take her on a picnic and eat oranges with her, then play on a swingset or throw around a frisbee. i want her to be my bff. she kind of reminds me of colbie caillat.

some things


as prompted by prodigal john, i too wonder why this guy isn't more famous. have you heard of damien rice? niether have i. but i'm addicted to him this morning on youtube.











i took a road trip this past weekend with Boyfriend and his friends gloria and chris. i promise to write more on that later. it was a long weekend of tons of fun and getting to know people. we left friday around noon, and came back sunday evening. went to the alamo on what just happened to be reenactment saturday. relaxed in the hot tub saturday night... again, i'll devote a whole other blog post to this later.

i know it's not time yet, but i've been dreaming of wedding registries. and by "dreaming", i obviously mean browsing the target website to get ideas of kitchen and bedroom things to register for. duh.

i'm wearing my hair curly today for the first time since my cut. i like that it doesn't feel as frizzy as it did before, maybe because of the cut and maybe because of the awesome new hair products i own.

it's working!

I want to tell you how much of a pain it feels sometimes to count calories. admittedly, the loseit app on my iphone really helps, but it's still some work. the best thing about counting calories is that it makes you really think-- do i seriously need to eat 14 thin mints? no? okay. just two this time. well, maybe that's the second best. so, what would the first best (most bestest!) thing about counting calories be, you ask?

today, i'm wearing a shirt that i bought months ago. i'm wearing it for the first time, because for the first time, it's not too tight around my upper arm.

even seeing a little bit of results helps to motivate.

my workout mix

i'm working out. seriously. i go to the gym sometime during the day and sweat bullets. today was my first day, but i'm totally loving it. when i feel this great after working out, why wouldn't i do it? then, using my loseit app, i track what i eat, and have been much better at it. i don't want to waste my exercise, now do i? so happy to be at this point in my life. next goal? drink more water. i totally feel dehydrated right now.
